Shiitake Broth
Shiitake mushrooms are an excellent source of antioxidants, ergothioneine and selenium plus copper, zinc, and lentinan. They’re a good plant based source of vitamin D.
Ergothioneine is a potent anti-oxidant and anti-inflammatory which can help slow a decline in memory and cognitive skills, it also helps to prevent stress-induced sleep disturbance.
Selenium helps prevent anxiety and symptoms of depression and plays an essential part in boosting the immune system.
Recipe
250g Shiitake mushrooms 1 red onion 2 cloves of garlic 2 celery sticks 2 small carrots 1 ltr vegetable stock
Wipe mushrooms clean and slice Finely chop or press garlic through garlic press Chop onion, celery and carrots into small pieces
Add all ingredients to the vegetable stock and simmer gently for 45 minutes to allow the flavours to develop into a rich, earthy broth. If you want to add a little extra drop in some Ramen noodles a few minutes before serving.
